Øl til ære for årstidernes skiften – Nordisk ølmanifest

I anden halvdel af 1800-tallet opstod de første industrielle bryggerier i Danmark og i de følgende 75 år blev det danske øl brygget i tre parallelle udgaver: Hjemmebryg på landet, håndværksøl på relativt små byggerier og det industrielle øl på ganske få og store bryggerivirksomheder. Denne treklang i dansk ølbrygning har også været en inspirationskile i udviklingen af det store spektrum af specialøl, der findes i Danmark og Norden. Det er også en af grundene til at vi har tradition for udvikling af og produktion af sæsonøl, højtidsøl og festøl.
Efter afholdelse af Nordic Brewer’s Symposium, som blev afholdt på Husbryggeriet Jacobsen, udarbejdede Per Kølster og Jens Eiken et forslag til et Nordisk øl-manifest, som kunne give os nordiske bryggerier et fælles udgangspunkt ved produktion af øl med nordisk oprindelse.
Påskeøllet & forårsøllet giver inspiration til at indføre nordiske øl-traditioner, til ære for vores skiftende årstider.!
Vi har udfærdiget det nordiske øl-manifest på engelsk, da alle i Norden så kan få lejlighed til at kommentere dette og måske også vil kunne give inspiration til nye nordiske øltyper
Proposal for a “Nordic Brewers Public Declaration of Intentions” for the future work of making Nordic Beers.
Objectives:
- To foster a unique Nordic beer taste by using our local /regional identity
- To strengthen the reputation of Nordic beer in the World.
- To strengthen the interplay between Nordic beers and the Nordic culinary art and to give beer a strong and key position in the movement “the new Nordic kitchen”
- To challenge and expand the possibilities for making beers
- To create a common interest among the breweries from the Nordic countries, and to develop a united basis
- To create a demand for new taste-experiences
What characterize a Nordic taste - ground rules?
1) We involve the beauty and the resources of the Nordic nature and agriculture
2) We combine our local/regional Nordic traditions with modern living and thinking
3) We emphasize a manifold of future Nordic tastes, which reflect the diversity of
our nature and culture
The Nordic & cultural image, contain the possibilities:
- To create local or regional tastes and hereby beer types
- To explore & develop the traditional use of raw materials like cereals, malts, hops and yeast.
- To give a free rein to our herbs, berries and fruits, limited only by imagination and mother nature herself (vulnerable and limited resources)
- To name and/or focus on the water, which we have in the Nordic countries
- To play with our cultural and historical ancestors e.g.:
o Smoked or air-dried malt
o Local grown hops and herbs
o Old cereal types and cultivars, searching for their aromas and brewing characteristics
o Exploration of traditional Nordic cereals like rye, buck wheat and oat
o Use of our past for inspiration – the mythology, the Viking age etc.,
o Local stories could be a source for inspiration.
o Drinking-culture (along with the snaps, warm, toddies, health, cooking beer with herbs etc)
o Beer for the occasion and celebrations e.g. weddings (royal …)
- To further develop the concept of beer for a given season and/or to be consumed fresh e.g.:

1. Spring beer (forårsøl)– a straight and elevating strong beer. “Metaphor for prolific springtime where the sap rises/people get frolicsome”.
2. Summer beer – (sommer øl) cooling, refreshing and thirst quenching. “
“Metaphor for our long bright summers, midnight sun and strong
aromas”
3. Autumn beer – (høst øl) – strong, heavy beers with roasted or smoked character & aromas or juice from e.g. berries or fruits.
“Metaphor for our cold, wet season and preparation for hibernation”
4. Winter beer/Christmas beer (jule øl) – Strong beers, spiced, with medium to heavy body.
“Metaphor for our Nordic darkness and strong forces of nature”
